Doughnut Muffins aka Duffins.





Hello world, well it has been a long while since we posted something on here. 
The Joneses are still baking mad... that will never stop.

So these new hybrid baking trends are being created, now here is a recipe for something I tried a while ago called 'Duffins'. Yes a strange name but they are a tasty twist on doughnuts baked like muffins. Please give them a go!



Ingredients 
  • 140g  caster sugar, plus 200g extra for dusting
  • 200g plain flour
  • 1 tsp bicarbonate of soda
  • 100ml Buttermilk ( Alternatively you could use 100ml natural yogurt)
  • 2 large eggs, beaten
  • 1 tsp vanilla extract
  • 140g butter, melted, plus extra for greasing
  • 12 tsp seedless raspberry jam


Pre Heat your oven to gas 5/ 190c grease a 12-hole muffin tin. Put 140g sugar, flour and bicarb in a bowl and mix to combine. In a jug, whisk together the buttermilk, eggs and vanilla. Pour the jug contents and the melted butter into the dry ingredients and quickly fold it all in with a metal spoon to combine.

Divide two-thirds of the mixture between the muffin holes. Carefully add 1 tsp jam into the centre of each, then cover with the remaining mixture. Bake for 16-18 mins until risen, golden and springy to touch. Leave the muffins to cool for 5 mins before lifting out of the tin and rolling in the extra sugar.

Things we've made before....

Baking with the Joneses.

I've had a bit of a change to this blog, and given it a new name.
My wife and I do a lot of baking together, as we make birthday cakes for friends. We work as a good team, Gemma is very creative when it comes to creating cakes and decorations. I enjoy making the cakes, combining all the ingredients perfectly together. That is why i'm going to combine our efforts and what we bake into one blog. We might even show you some of the baking we do with our 2-year-old son.

This cake above was made for a village school fete baking competition. We sadly didn't win the comp, but it tasted amazing!

           (A Miffy birthday cake)
This cake shows Gemma's true creative skill. We made this for our friend's daughter who loves Miffy. The birthday girl loved the cake, that's what I enjoy about baking and can make people happy! 

So that is just a few of the celebration cakes we have made together. We've got to make another one for a friend's son. We will tweet the process so keep an eye out on @baking_joneses.

The start of something....

Well hello there!
Cupcakes

I have been keen to start a baking blog for a while now. So I've finally signed up and here I am!

I wanna use this blog to post some of my favourite recipes for cakes, biscuits and much more.

This will be a working process, as I am a busy family man with a lovely wife and my two year old son.

For me baking is a relaxing thing, I could easily spend hours making cakes and things for friends and family.

So thank you for reading my first post, and I promise there will be more!
